Banana Turon Y Crema with Blueberry
by Cotton Bleu (Serves 3-4)

Ingredients: 3 ripe bananas, peeled n halved lengthways, ½ cup brown sugar, 2 tbsp cinnamon powder, 5 pieces spring roll pastry, 4 scoops Vanilla Ice Cream 1 box fresh blueberries, ¼ cup caster sugar, 4 cups vegetable oil, for frying ¼ cup sliced almonds, toasted ¼ cup water.

Methods: Mix brown sugar with cinnamon powder and roll banana slices in the mixture. Individually wrap sugar coated banana halves in the spring roll pastry and seal the ends with some water. Heat vegetable oil in a shallow pan and quickly fry bananas on high heat till they turn a uniform golden brown. Cook blueberries in a pot with water and caster sugar until it achieves a soft, syrupy texture. Set aside and leave to cool and thicken. Cut fried banana pastry into halves and serve hot with a generous scoop of Häagen-Dazs vanilla ice cream topped with blueberry sauce. Garnish with toasted almonds.
